The lunchbox formula: protein + sabzi + measured carb
Build every tiffin with three parts.
- Protein, the biggest share. Dal, rajma, chole, curd, paneer, eggs, sprouts or soya. This is the part that keeps you full until evening. Most Indian women pack too little of it, as we explain in protein for Indian women.
- Sabzi, generous. Any vegetable dish, plus cucumber, carrot or tomato on the side if the sabzi is small. Fibre stretches the meal.
- Carb, measured once at home. One katori of rice, two rotis, or one katori of khichdi or dalia. Measure it while packing, when you are calm, not at 1pm when you are hungry.
The order matters too. Measured at home beats estimated at the desk. A tiffin decided at 8am is a decision your hungry 1pm self cannot overrule.
5 real tiffins that survive an office day
These travel well, taste fine at room temperature or after one office-microwave round, and follow the formula.
- Rajma, rice and salad. One katori rajma masala, one katori rice, cucumber on the side. Rajma holds its taste for hours and the protein plus fibre keeps the afternoon quiet.
- Vegetable dal khichdi with curd. Dal khichdi is a one-box lunch: dal, rice and vegetables cooked together. Pack a small box of curd to lift the protein further.
- Curd rice with a vegetable side. Curd rice with tempering is the summer hero. It stays fresh, cools you down, and the curd brings protein. Add a stir-fried beans or bhindi sabzi.
- Chole with cucumber salad and one roti. One katori chole, lots of salad, one roti. Chickpeas are filling far beyond their size.
- Dal palak, rice and a boiled egg. Dal palak packs protein and greens in one dish. If you eat eggs, one boiled egg tucked into the tiffin makes the lunch genuinely complete.

Why does my tiffin leave me hungry by 4pm?
Almost always, one of three reasons. The protein was too small, a spoon of dal does not count as a protein serving, it needs to be a full katori. The lunch was mostly carbs, three rotis with a potato sabzi digests fast and hunger returns fast. Or lunch happened at 12 because of a meeting-free slot, which makes 4pm a genuine four-hour gap.
Fix the tiffin first. A proper protein katori at lunch changes the whole afternoon.
The 4pm hunger plan
Even with a good lunch, a small 4pm gap is normal. Plan for it instead of pretending it will not come.
- Keep roasted makhana or masala roasted chana in your desk drawer. One katori, not the whole packet.
- A cup of chai without biscuits, or with the snack above instead of biscuits.
- Buttermilk or a small curd if your office has a fridge.
- A fruit you packed in the morning. It cannot lose to the vending machine if it is already on your desk.
The rule is simple: the 4pm snack is decided at 8am. Office canteens and pantry biscuits win only when there is no plan.
What about canteen days and team lunches?
Some days the tiffin stays home. That is fine. Order by the same formula: something protein-heavy (dal, chole, paneer, egg or chicken), a vegetable, and one measured carb. Is it okay to eat rice in my office tiffin every day?
Yes. One measured katori of rice with a full katori of dal, rajma or chole and a sabzi is a balanced lunch, not a diet mistake. Rice becomes a problem only when it fills most of the box and the protein shrinks to a garnish. I pack my tiffin at 7am. Will the food still be good for weight loss by lunch?
Yes. Dal, rajma, khichdi, curd rice and sabzis keep their protein and fibre regardless of a few hours in a tiffin. Food does not become fattening by sitting in a box. In hot months, curd-based dishes are safest if your office has a fridge, or choose dal and chana dishes instead. Pack salads dry and add them at lunch so they stay crisp.
What is the best tiffin if I have no time to cook in the morning?
Cook once at night, pack twice. Dal khichdi, rajma and chole all taste as good the next day, so make dinner portions slightly bigger and box lunch before you sleep.
