Protein-rich paneer bhurji breakfast

Paneer bhurji is a warm, savoury, protein-packed breakfast that comes together in minutes. Paneer is one of the most convenient vegetarian protein sources, so this is a filling, PCOS-friendly way to start the day, especially if plain carbs usually leave you hungry by mid-morning.

Why it helps

Paneer is high in protein, which slows digestion and keeps your blood sugar steady. Cooking it with plenty of vegetables adds fibre and volume. A breakfast like this keeps you full and reduces the afternoon craving crash common in PCOS. Why protein matters

Ingredients (serves 2)

  • 1 small onion, chopped
  • 1 small tomato, chopped

  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • 1 to 2 teaspoons oil
  • Coriander to garnish

Method

  1. Heat oil in a pan and add cumin seeds.
  2. Add onion and cook until soft, then add capsicum and tomato and cook a few minutes.
  3. Add turmeric, salt and green chilli.
  4. Add the crumbled paneer and stir well. Cook for 2 to 3 minutes until warmed through.

Make it your own

  • Add spinach or grated carrot for extra fibre.
  • Use a little less oil and more vegetables to keep it light.
  • For a lower-carb plate, skip the roti and add more vegetables instead.
